  • You need a wok with a lid
  • A stainless steel spatula

< Ingredients >

  • Half a chicken cut ups
  • 2 large King Mushrooms
  • Sliced ginger (about 10 slices)
  • a handful Nine Layer herbs (or basils)
  • Half a bowl sesame oil (Taiwanese ricebowl)
  • Half a bowl rice wine
  • Half a bowl soy sauce + creamy soy sauce (醬油膏)
  • 1 tsp brown sugar

< Instructions >
1. Cut up Mushrooms in large pieces

2. In a wok, heat sesame oil till hot

3. Place ginger slices, stir fry in medium high heat till ginger slightly curls

4. Add chicken, stir fry till no blood visible in bones

5. Slowly pour rice wine along the side of the wok, stir fry for 5 minutes

6. Pour soy sauce mix, then stir fry

7. Add mushrooms, stir fry till well coated with brown soy sauce

8. Add sugar into the sauce, blend well

9. Cover with the lid, cook under low heat for 20 minutes

10. Check chicken if fully cooked. If not, put the lid back on and cook for another 10 – 20 minutes or until chicken is well done.

11. Add Nine Layer herbs, stir fry till soft

Serve over brown rice
